HOME-MADE STRAWBERRY SKYR

This one is barely a recipe, but it earns its keep. Just a few ingredients – strawberries, lemon, sugar and skyr – stirred together and left to do their thing. The lemon brings brightness, the strawberries soften and release their juice, and the skyr folds through into something cool, thick and quietly satisfying. Around 19g of protein a serving, no faff, and it lasts for days.
HOME-MADE STRAWBERRY SKYR
SERVES 4 // READY IN 5 MINS // 140 CALS
INGREDIENTS
250g (9oz) strawberries
1 lemon
1 tbsp sugar
800g (28oz) skyr yoghurt
METHOD
STEP 1
Wash and hull the strawberries. Cut into small pieces.
Halve the lemon and squeeze the juice into a medium bowl.
STEP 2
Add the strawberries to the lemon juice and add the sugar. Stir together and leave, covered, to sit for 2-3 hours. This allows for the strawberry juice to be released.
STEP 3
Stir the strawberries before adding all the skyr and stirring slowly to combine.
STEP 4
Store in the fridge until needed. It lasts up to 4 days.
