STEAK AND FETA SALAD

This is a proper grown-up salad that actually fills you up. The steak cooks quickly in a hot pan and stays beautifully tender, while the feta adds that lovely creamy saltiness against the fresh leaves and tomatoes. With 35g of protein packed in, it’s a light but satisfying dinner that comes together in just 10 minutes. Perfect for those July evenings when you want something fresh and filling without much fuss.
STEAK AND FETA SALAD

INGREDIENTS
200g (7oz) sirloin steak
salt and freshly ground black pepper, to taste
1 tbsp olive oil
1 tsp sugar
2 tsp balsamic vinegar
80g (3oz) salad leaves
16 cherry tomatoes
60g (2oz) feta
METHOD
STEP 1
Season the steaks well with salt and pepper and if possible leave it at room temp for a bit before cooking. Heat a frying pan on a high heat and, when hot, add the steak to the pan. Cook for 1-3 minutes each side depending on thickness and how well cooked you like the steak. Remove to a plate, cover and leave to rest for 5-10 mins.
STEP 2
Prepare the dressing by mixing together the olive oil, sugar and balsamic vinegar.
STEP 3
Arrange the salad leaves and cherry tomatoes over two serving plates. Divide the feta into two and crumble over both plates. Drizzle the dressing over.
STEP 4
Place the steaks on a chopping board and cut into thin slices with a sharp knife.
STEP 5
Arrange the sliced steak over both salads and enjoy
