OVEN-BAKED PRAWN PAELLA

This is a proper comfort dinner that feels like a treat but doesn’t take over your evening. The oven does most of the work while you get on with other things, and you end up with all that smoky paprika warmth and golden rice that makes paella so satisfying. The chorizo adds depth, the prawns stay tender, and everything soaks up those lovely flavours. With 32g of protein and under 500 calories, it’s a generous dinner that still feels balanced and steady - just right for a midweek evening when you want something a bit special.
OVEN-BAKED PRAWN PAELLA
SERVES 4 // READY IN 30 MINS // 486 CALS
INGREDIENTS
1 onion
1 heaped tsp garlic paste
50g (2oz) chorizo
600ml (3 cups/2 cubes) chicken stock
2 tbsp tomato paste
1 tsp smoked paprika
half a tsp turmeric
300g (1.5 cups) basmati rice
100g (1 cup) frozen peas
450g (1 lb) cooked and peeled king prawns (shrimp)
juice of 1 lemon
METHOD
STEP 1
Pre-heat the oven to 220C/200C fan/gas mark 8. Lightly fry the onions, garlic and chorizo together, until the chorizo has released all it’s fatty juices.
STEP 2
Place the chicken stock, tomato paste, smoked paprika and turmeric in a microwaveable bowl or jug. Heat in microwave on high until steaming (about 3 mins).
STEP 3
Place the rice in a baking dish and pour the onion and chorizo mixture over. Toss through the rice until each grain is just covered.
STEP 4
Add the peas to the baking dish and pour over the stock. Bake for 12-15 minutes - until the rice is just cooked.
STEP 5
Stir in the frozen prawns and return to the oven for 5-7 minutes until the prawns are fully warmed. Stir in the lemon juice before serving
