Sometimes you just need to know how to poach an egg properly without the usual faff. This microwave method works every time and takes just 2 minutes from start to finish. The vinegar helps the white set quickly, and the gentle heat means no overcooked edges or rubbery texture. It’s handy for a quick breakfast, adding protein to salads, or just classic on toast (with or without marmite!)
MICROWAVE POACHED EGG

INGREDIENTS
1 large egg, room temperature
1 tsp white wine vinegar
125ml (half a cup) water, boiling
METHOD
STEP 1
Take a small bowl, cup or ramekin and add the vinegar and water. Use a spoon to swirl the water in the cup.
STEP 2
With the water still swirling, break the egg on the side of the cup and lower into the water.
STEP 3
Microwave for 30 seconds. Leave to rest in the water for 2 minutes.
STEP 4
Scoop out from the water with a spoon and serve immediately
