HALLOUMI SALAD WITH BALSAMIC GLAZE

INGREDIENTS
15g (1oz) pinenuts
50g (2oz) halloumi, sliced
40g (1oz) salad leaves
10cm (4in) cucumber
8 cherry tomatoes
4 peppadew piquante peppers, drained and quartered
2 tsp balsamic vinegar
1 tsp honey
METHOD
STEP 1
Heat a frying pan on the highest heat. When hot, toss in the pinenuts and toast them until they start to brown, shaking the pan gently regularly. Remove the pinenuts to a plate to cool.
STEP 2
Add the halloumi to the still hot pan. Cook for 1-2 minutes each side, until browned. Remove to a plate when cooked.
STEP 3
Arrange the salad leaves, cucumber, cherry tomatoes and peppadews on a plate.
STEP 4
In a small bowl or cup, stir together the balsamic vinegar and honey.
STEP 5
Add the halloumi to the salad, pour over the dressing and finally top with the pinenuts
