This is a really good lunchbox salad that doesn’t wilt or go soggy when you pack it up. The puy lentils have that earthy bite, the sun-dried tomatoes add sweetness, and the feta brings a bit of saltiness that works well with the pistachios. It’s filling enough to keep you going through the afternoon, with plenty of protein built in, and it comes together quickly when you’re getting ready in the morning. The kind of lunch that actually makes you look forward to lunchtime.

INGREDIENTS
40g (1.5oz) baby spinach leaves
100g (4oz) cooked puy lentils
30g (about 3) sun-dried tomatoes in oil, chopped
1 tsp red wine vinegar
30g (1oz) feta
20g (about 6) pistachios, bashed or chopped
METHOD
STEP 1
Combine the puy lentils with the sun-dried tomatoes, red wine vinegar and salt and pepper.
STEP 2
Arrange the spinach leaves over a plate or container and add the puy lentil mixture. Crumble over the feta.
STEP 3
Finally add the pistachios
