CREAMY SALMON & LEEK BOWL

The salmon cooks beautifully in the aromatic leek broth, staying flaky and tender, while the leeks become soft and sweet. The creme fraiche and egg yolk create a silky, creamy finish that ties everything together without being too rich. CREAMY SALMON & LEEK BOWL

INGREDIENTS
10g (heaped tsp) butter
1 shallot
2 leeks, washed and chopped into rings
1 salmon fillet
300ml (11oz) vegetable stock, fresh or made with 1 cube
1 tsp fish sauce
2 tbsp creme fraiche
1 egg yolk
salt and freshly ground black pepper, to taste
METHOD
STEP 1
Heat the butter in a wide lidded saucepan until it has melted. Stir in the shallot and leeks. Stir-fry for 2 minutes.
STEP 2
Place the salmon on top of the leeks and pour in the stock and fish sauce. Bring up to a simmer and cook with the lid on for 10 minutes. Remove from the heat (leaving the lid on) and rest for a further 5 minutes.
STEP 3
Whisk the creme fraiche and egg yolk together. Add a few tbsp of stock from the pan to the creme fraiche. Whisk again to loosen it.
STEP 4
Place the pan back on the heat and bring to a gentle simmer. Pour in the creme fraiche mixture and warm gently. Serve in a wide bowl with a good sprinkling of black pepper
